AUTHENTIC ITALIAN FOCACCIA BREAD WITH CHERRY TOMATOES AND ROSEMARY

This authentic Italian focaccia is soft, airy, and infused with rich olive oil flavor. Topped with juicy roasted cherry tomatoes, fragrant rosemary, and flaky sea salt, this homemade bread is golden on the outside and perfectly fluffy on the inside. Ingredients

For the Dough

  • 4 cups all-purpose flour (500 g)
  • 2 ¼ tsp instant yeast
  • 2 tsp salt
  • 1 ¾ cups warm water (420 ml)
  • 3 tbsp olive oil

For the Topping

  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary
  • 1 tsp flaky sea salt
  • Freshly ground black pepper

Instructions

1. Prepare the Dough

In a large bowl, combine flour, yeast, and salt.

Add warm water and olive oil.

Mix until a sticky dough forms.

Cover and let rise for 1½ to 2 hours or until doubled in size.

2. Shape the Focaccia

Grease a 9×13-inch baking pan generously with olive oil.

Transfer the dough to the pan and gently stretch it toward the edges.

Cover and let rise again for 30 minutes.

3. Add the Toppings

Preheat oven to 425°F (220°C).

Using your fingertips, press deep dimples all over the dough.

Drizzle with olive oil.

Top with cherry tomatoes, rosemary, sea salt, and black pepper.

4. Bake

Bake for 22–25 minutes until golden brown.

5. Finish

Brush with a little extra olive oil while warm.

Allow to cool slightly before slicing.
