HONEY GLAZED CARROT AND WALNUT TARTLETS WITH FETA SNOW

These Honey Glazed Carrot and Walnut Tartlets with Feta Snow are a beautiful blend of sweet and savory flavors. Crisp buttery tartlet shells are filled with tender honey-roasted carrots, crunchy toasted walnuts, and finished with a delicate sprinkle of creamy feta cheese. Ingredients

  • 1 package mini tartlet shells (12 tartlets)
  • 2 cups carrots, peeled and diced
  • 1/4 cup honey
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp fresh thyme leaves
  • 1/2 cup walnuts, roughly chopped
  • 1/2 cup feta cheese, crumbled

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the carrots with honey, olive oil, salt, pepper, and thyme.
  3. Spread the carrots on a baking sheet and roast for 20–25 minutes, stirring once halfway through, until tender and caramelized.
  4. During the last 5 minutes of roasting, add the walnuts to the baking sheet and lightly toast them.
  5. Warm the tartlet shells according to package instructions.
  6. Fill each tartlet shell with the honey-glazed carrots.
  7. Sprinkle generously with toasted walnuts.
  8. Finish with crumbled feta cheese to create the “feta snow” effect.
  9. Garnish with extra thyme leaves and a light drizzle of honey if desired.
  10. Serve warm or at room temperature.
