Ingredients
- 1 package mini tartlet shells (12 tartlets)
- 2 cups carrots, peeled and diced
- 1/4 cup honey
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp fresh thyme leaves
- 1/2 cup walnuts, roughly chopped
- 1/2 cup feta cheese, crumbled
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the carrots with honey, olive oil, salt, pepper, and thyme.
- Spread the carrots on a baking sheet and roast for 20–25 minutes, stirring once halfway through, until tender and caramelized.
- During the last 5 minutes of roasting, add the walnuts to the baking sheet and lightly toast them.
- Warm the tartlet shells according to package instructions.
- Fill each tartlet shell with the honey-glazed carrots.
- Sprinkle generously with toasted walnuts.
- Finish with crumbled feta cheese to create the “feta snow” effect.
- Garnish with extra thyme leaves and a light drizzle of honey if desired.
