BURRATA STUFFED CHICKEN BREAST WITH CRANBERRY GLAZE

Ingredients

For the Chicken

  • 4 boneless skinless chicken breasts
  • 8 oz (225 g) burrata cheese
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper

For the Cranberry Glaze

  • 1 cup fresh or frozen cranberries
  • ¼ cup honey
  • ¼ cup orange juice
  • 1 tbsp balsamic vinegar
  • 1 tsp fresh thyme leaves

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast without cutting all the way through.
  3. Stuff each breast with burrata cheese and secure with toothpicks if needed.
  4. Rub chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  5. Heat a large oven-safe skillet over medium-high heat and sear chicken for 3–4 minutes per side until golden.
  6. Transfer skillet to the oven and bake for 18–22 minutes or until chicken reaches 165°F (74°C).
  7. Meanwhile, combine cranberries, honey, orange juice, balsamic vinegar, and thyme in a saucepan.
  8. Simmer for 8–10 minutes until cranberries burst and the glaze thickens slightly.
  9. Remove chicken from oven and let rest for 5 minutes.
  10. Spoon cranberry glaze generously over the chicken before serving.
