FLUFFY MINI BLUEBERRY PANCAKE BITES WITH POWDERED SUGAR

Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 large egg
  • ¾ cup milk
  • 1 tbsp melted butter
  • 1 tsp vanilla extract
  • ¾ cup fresh blueberries
  • Powdered sugar, for serving

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the egg, milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and mix until just combined.
  4. Gently fold in the blueberries.
  5. Heat a lightly greased nonstick skillet over medium-low heat.
  6. Drop small spoonfuls of batter onto the skillet to form mini pancakes about 2 inches wide.
  7. Cook for 1–2 minutes until bubbles form on the surface.
  8. Flip and cook for another 1–2 minutes until golden brown.
  9. Transfer to a serving plate and repeat with remaining batter.
  10. Dust with powdered sugar and garnish with fresh blueberries before serving.
