BRAZILIAN COCONUT CHICKEN – CREAMY, FLAVORFUL, AND EASY ONE-PAN DINNER

This Brazilian Coconut Chicken is a rich and comforting dish made with tender chicken simmered in a creamy coconut sauce infused with garlic, onions, tomatoes, and warm spices. Inspired by Brazilian flavors, this easy one-pan recipe is perfect for busy weeknights and pairs beautifully with fluffy rice for a satisfying family meal.

Ingredients

  • 1½ lb (700 g) chicken thighs or breasts, cut into chunks
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 tomato, diced
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon turmeric
  • Salt and black pepper, to taste
  • 1 can (13.5 oz / 400 ml) coconut milk
  • ½ cup chicken broth
  • 1 tablespoon tomato paste
  • Fresh cilantro, chopped
  • Cooked white rice, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken with salt, pepper, paprika, and cumin.
  3. Add the chicken and cook until lightly golden. Remove and set aside.
  4. In the same pan, sauté the onion, garlic, bell pepper, and tomato for 3–4 minutes.
  5. Stir in the tomato paste, coconut milk, chicken broth, and turmeric.
  6. Return the chicken to the skillet and simmer for 15–20 minutes until fully cooked and the sauce becomes creamy.
  7. Garnish with fresh cilantro and serve over steamed rice.
