This Brazilian Coconut Chicken is a rich and comforting dish made with tender chicken simmered in a creamy coconut sauce infused with garlic, onions, tomatoes, and warm spices. Inspired by Brazilian flavors, this easy one-pan recipe is perfect for busy weeknights and pairs beautifully with fluffy rice for a satisfying family meal.
Ingredients
- 1½ lb (700 g) chicken thighs or breasts, cut into chunks
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 red bell pepper, sliced
- 1 tomato, diced
- 1 teaspoon paprika
- ½ teaspoon cumin
- ½ teaspoon turmeric
- Salt and black pepper, to taste
- 1 can (13.5 oz / 400 ml) coconut milk
- ½ cup chicken broth
- 1 tablespoon tomato paste
- Fresh cilantro, chopped
- Cooked white rice, for serving
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken with salt, pepper, paprika, and cumin.
- Add the chicken and cook until lightly golden. Remove and set aside.
- In the same pan, sauté the onion, garlic, bell pepper, and tomato for 3–4 minutes.
- Stir in the tomato paste, coconut milk, chicken broth, and turmeric.
- Return the chicken to the skillet and simmer for 15–20 minutes until fully cooked and the sauce becomes creamy.
- Garnish with fresh cilantro and serve over steamed rice.
