Authentic Greek Chicken Gyros with Creamy Homemade Tzatziki

Ingredients

For the Chicken Marinade

  • 2 lbs (900 g) boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • ½ tsp thyme
  • Salt and black pepper, to taste

For the Tzatziki

  • 1 cup Greek yogurt
  • ½ English cucumber, grated and squeezed dry
  • 1 garlic clove, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp chopped fresh dill
  • Salt and pepper, to taste

For Assembling

  • 4 large pita breads
  • 2 tomatoes, sliced
  • ½ red onion, thinly sliced
  • 1 cup shredded lettuce
  • Sliced cucumber
  • Crumbled feta (optional)
  • Fresh parsley

Instructions

  1. In a large bowl, combine the olive oil, lemon juice, garlic, oregano, paprika, cumin, thyme, salt, and pepper. Add the chicken and marinate for at least 1 hour (overnight for best flavor).
  2. Grill or cook the chicken in a hot skillet for 5–6 minutes per side, until cooked through and lightly charred. Let it rest for 5 minutes before slicing.
  3. Mix all the tzatziki ingredients in a bowl. Refrigerate for at least 20 minutes.
  4. Warm the pita bread until soft and pliable.
  5. Fill each pita with lettuce, tomatoes, cucumber, red onion, sliced chicken, and plenty of tzatziki.
  6. Garnish with feta and fresh parsley if desired. Fold and serve immediately.
