Ingredients
For the Chicken Marinade
- 2 lbs (900 g) boneless, skinless chicken thighs
- 3 tbsp olive oil
- Juice of 1 lemon
- 3 garlic cloves, minced
- 2 tsp dried oregano
- 1 tsp smoked paprika
- 1 tsp ground cumin
- ½ tsp thyme
- Salt and black pepper, to taste
For the Tzatziki
- 1 cup Greek yogurt
- ½ English cucumber, grated and squeezed dry
- 1 garlic clove, minced
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp chopped fresh dill
- Salt and pepper, to taste
For Assembling
- 4 large pita breads
- 2 tomatoes, sliced
- ½ red onion, thinly sliced
- 1 cup shredded lettuce
- Sliced cucumber
- Crumbled feta (optional)
- Fresh parsley
Instructions
- In a large bowl, combine the olive oil, lemon juice, garlic, oregano, paprika, cumin, thyme, salt, and pepper. Add the chicken and marinate for at least 1 hour (overnight for best flavor).
- Grill or cook the chicken in a hot skillet for 5–6 minutes per side, until cooked through and lightly charred. Let it rest for 5 minutes before slicing.
- Mix all the tzatziki ingredients in a bowl. Refrigerate for at least 20 minutes.
- Warm the pita bread until soft and pliable.
- Fill each pita with lettuce, tomatoes, cucumber, red onion, sliced chicken, and plenty of tzatziki.
- Garnish with feta and fresh parsley if desired. Fold and serve immediately.
