This One-Pot Sausage, Peppers & Potatoes is the perfect weeknight dinner that’s hearty, flavorful, and incredibly easy to make. Juicy browned sausages are cooked with tender golden potatoes, sweet bell peppers, caramelized onions, and garlic in one pot for a comforting meal with minimal cleanup. Ingredients
- 4 Italian sausages (mild or spicy)
- 1½ lbs (700 g) baby Yukon Gold potatoes, cut into chunks
- 2 bell peppers (1 red, 1 yellow), sliced
- 1 large onion, cut into wedges
- 4 garlic cloves, minced
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- ½ tsp dried oregano
- Salt and freshly ground black pepper, to taste
- 2 tbsp chopped fresh parsley
- Optional: grated Parmesan for serving
Instructions
- Heat the olive oil in a large Dutch oven or deep skillet over medium-high heat.
- Brown the sausages for 6–8 minutes, turning occasionally. Remove and set aside.
- Add the potatoes and cook until lightly golden, about 8 minutes.
- Stir in the onions and bell peppers, cooking until they begin to soften.
- Add the garlic, smoked paprika, Italian seasoning, oregano, salt, and pepper.
- Return the sausages to the pot, cover, and cook over medium-low heat for 20–25 minutes, stirring occasionally, until the potatoes are tender and the sausages are fully cooked.
- Sprinkle with fresh parsley and serve hot with grated Parmesan if desired.
