Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- ½ cup chopped sun-dried tomatoes
- 1 tsp Italian seasoning
- ¼ tsp red pepper flakes
- 4 cups chicken broth
- 2 cans (15 oz each) cannellini beans, drained and rinsed
- 1 cup heavy cream
- 2 cups baby spinach
- ½ cup grated Parmesan cheese
- Salt and black pepper, to taste
- Fresh basil or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion until softened, about 4 minutes.
- Add garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for 1 minute.
- Pour in the chicken broth and add the cannellini beans.
- Simmer for 15 minutes.
- Blend about one-third of the soup for a creamier texture, then return it to the pot.
- Stir in heavy cream, Parmesan, and spinach.
- Cook for 3–5 minutes until the spinach wilts.
