MARRY ME WHITE BEAN SOUP

This Marry Me White Bean Soup is rich, creamy, and packed with flavor. Inspired by the famous Marry Me Chicken, this cozy soup combines tender white beans, sun-dried tomatoes, garlic, spinach, Parmesan, and a creamy broth for the ultimate comforting meal. It’s an easy one-pot dinner that’s hearty, satisfying, and perfect for chilly nights.

Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • ½ cup chopped sun-dried tomatoes
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes
  • 4 cups chicken broth
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 cup heavy cream
  • 2 cups baby spinach
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion until softened, about 4 minutes.
  2. Add garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Cook for 1 minute.
  3. Pour in the chicken broth and add the cannellini beans.
  4. Simmer for 15 minutes.
  5. Blend about one-third of the soup for a creamier texture, then return it to the pot.
  6. Stir in heavy cream, Parmesan, and spinach.
  7. Cook for 3–5 minutes until the spinach wilts.
  8. Season with salt and black pepper.
  9. Garnish with fresh basil and extra Parmesan before serving.
