QUICK GREEK CHICKEN MEATBALLS WITH LEMON ORZO

Ingredients

For the Chicken Meatballs

  • 1 lb (450 g) ground chicken
  • ⅓ cup breadcrumbs
  • ¼ cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 egg

For the Lemon Orzo

  • 1 cup uncooked orzo
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • 2 cups baby spinach
  • Juice of 1 lemon
  • Zest of 1 lemon
  • ½ cup crumbled feta cheese
  • Fresh dill or parsley for garnish

Instructions

1. Make the Meatballs

In a bowl, combine ground chicken, breadcrumbs, feta, garlic, parsley, oregano, salt, pepper, and egg. Mix gently and form 16 small meatballs.

2. Cook the Meatballs

Heat olive oil in a large skillet over medium heat. Cook meatballs for 8–10 minutes, turning occasionally, until golden and cooked through. Transfer to a plate.

3. Cook the Orzo

In the same skillet, add orzo and chicken broth. Bring to a simmer
