Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 cup brown lentils, rinsed
  • 1 can (14 oz) diced tomatoes
  • 6 cups vegetable or chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ½ teaspoon turmeric (optional)
  • 1 bay leaf
  • Salt and black pepper to taste
  • Fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery and cook for 5 minutes.
  3. Stir in the garlic, cumin, paprika, and turmeric.
  4. Add the lentils, diced tomatoes, broth, and bay leaf.
