Ingredients
For the Dough
- 3½ cups (440 g) all-purpose flour
- 2¼ teaspoons active dry yeast
- ¾ cup warm milk
- ¼ cup granulated sugar
- 2 large eggs
- ¼ cup unsalted butter, softened
- ½ teaspoon salt
- Vegetable oil, for frying
For the Vanilla Pastry Cream
- 2 cups whole milk
- 4 egg yolks
- ½ cup granulated sugar
- ¼ cup cornstarch
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
For Coating
- 1 cup granulated sugar or powdered sugar
Instructions
Make the Dough
- In a bowl, combine warm milk, yeast, and sugar. Let stand for 5 minutes.
- Add eggs, butter, salt, and flour. Mix until a soft dough forms.
- Knead for 8–10 minutes until smooth.
- Cover and let rise for 1½ hours, until doubled in size.
Prepare the Pastry Cream
- Heat the milk in a saucepan until warm.
- In another bowl, whisk egg yolks, sugar, and cornstarch.
- Slowly pour in the warm milk while whisking.
- Return to the saucepan and cook over medium heat until thick.
- Remove from heat and stir in vanilla and butter.
- Cover and chill completely.
Fry the Donuts
- Roll out the dough to ½-inch thickness.
- Cut circles and let them rise for 30 minutes.
- Heat oil to 350°F (175°C).
- Fry each donut for 1–2 minutes per side until golden brown.
- Drain and coat in sugar.
Fill the Donuts
- Transfer the pastry cream to a piping bag.
- Fill each donut generously through the side.
- Dust with powdered sugar and serve.
