Ingredients
For the Salad
- 6 cups chopped kale
- 1 large orange, peeled and segmented
- 1 grapefruit, peeled and segmented
- ½ cup pomegranate arils
- 1 avocado, sliced
- ¼ cup sliced almonds, toasted
- ¼ cup crumbled feta cheese (optional)
For the Honey Lemon Dressing
- 3 tablespoons olive oil
- 2 tablespoons fresh lemon juice
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
- Wash and chop the kale. Massage it with a little olive oil for 1–2 minutes to soften.
- Arrange the kale in a large serving bowl.
- Top with orange segments, grapefruit, pomegranate seeds, avocado slices, toasted almonds, and feta cheese.
- In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
