CITRUS POMEGRANATE KALE SALAD WITH HONEY LEMON DRESSING

Ingredients

For the Salad

  • 6 cups chopped kale
  • 1 large orange, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • ½ cup pomegranate arils
  • 1 avocado, sliced
  • ¼ cup sliced almonds, toasted
  • ¼ cup crumbled feta cheese (optional)

For the Honey Lemon Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste

Instructions

  1. Wash and chop the kale. Massage it with a little olive oil for 1–2 minutes to soften.
  2. Arrange the kale in a large serving bowl.
  3. Top with orange segments, grapefruit, pomegranate seeds, avocado slices, toasted almonds, and feta cheese.
  4. In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
  5. Drizzle the dressing over the salad just before serving and toss gently.
