Ingredients
- 2 cups cherry tomatoes, diced
- 8 oz (225 g) fresh mozzarella, diced
- ½ cup mascarpone cheese
- ¼ cup heavy cream
- 3 tablespoons basil pesto
- 6 slices toasted baguette or ladyfinger-style savory crackers
- 2 tablespoons olive oil
- 1 tablespoon balsamic glaze
- Fresh basil leaves
- Salt and black pepper
Instructions
1. Prepare the Cream
Whisk together the mascarpone, heavy cream, and 1 tablespoon pesto until smooth.
2. Prepare the Tomatoes
Combine the diced tomatoes with olive oil, salt, pepper, and a few chopped basil leaves.
3. Assemble the Tiramisu
Break the toasted bread into pieces and place a layer at the bottom of serving glasses.
Add a layer of tomato mixture, followed by mozzarella cubes and mascarpone cream.
Repeat the layers.
4. Finish
