Ingredients

  • 2 tablespoons olive oil

  • 2 carrots, sliced
  • 2 celery stalks, sliced

  • 8 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 cup uncooked white rice
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (or to taste)
  • 1 tablespoon lemon juice (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, carrots, and celery. Cook for 5–6 minutes until softened.
  3. Stir in the garlic and cook for 30 seconds until fragrant.
  4. Pour in the chicken broth and bring to a gentle boil.
  5. Add the rice, thyme, parsley, salt, and black pepper.
  6. Reduce heat and simmer for 18–20 minutes, or until the rice is tender.
  7. Stir in the shredded chicken and cook for another 5 minutes.
  8. Add lemon juice if using and adjust seasoning to taste.
  9. Garnish with fresh parsley and serve hot.
