Ingredients
- 4 boneless, skinless chicken breasts
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 2 tbsp olive oil
- 2 tbsp butter
- 12 oz (340 g) mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 2 tbsp Dijon mustard
- 1/2 cup grated Parmesan cheese
- 1 tsp dried thyme
- Fresh parsley for garnish
Instructions
1. Season the Chicken
Pat the chicken dry.
Season both sides with salt, pepper, and garlic powder.
2. Sear the Chicken
Heat olive oil in a large skillet over medium-high heat.
Cook chicken for 5–6 minutes per side until golden brown.
Transfer to a plate.
3. Cook the Mushrooms
In the same skillet, melt butter.
Add mushrooms and cook for 5–6 minutes until browned.
Add garlic and cook for 30 seconds.
4. Make the Dijon Sauce
Pour in chicken broth and scrape up any browned bits.
Stir in heavy cream, Dijon mustard, Parmesan cheese, and thyme.
Simmer for 3–4 minutes until the sauce thickens slightly.
5. Return the Chicken
Place chicken back into the skillet.
Spoon the sauce over the chicken.
Reduce heat to low and simmer for 8–10 minutes until the chicken is fully cooked and tender.
6. Garnish and Serve
