Ingredients
- 2 tbsp olive oil
- 2 chicken breasts, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper to taste
- 3 cups (720 ml) chicken broth
- 1 cup (240 ml) heavy cream
- 12 oz (340 g) penne pasta
- 1 cup (50 g) fresh spinach
- ½ cup (80 g) sun-dried tomatoes, chopped
- 1 cup (100 g) grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet or deep pan over medium-high heat.
- Add diced chicken, season with salt, pepper, paprika, and Italian seasoning.
- Cook for 5–6 minutes until golden and cooked through.
- Add garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and heavy cream.
- Add the uncooked penne pasta and stir well.
- Bring to a gentle boil.
- Reduce heat to medium-low.
- Cover and cook for 12–15 minutes, stirring occasionally, until the pasta is tender.
- Stir in spinach and sun-dried tomatoes.
- Add Parmesan cheese and mix until melted and creamy.
- Simmer for 2 minutes until the sauce thickens.
- Garnish with fresh parsley and extra Parmesan.
- Serve immediately while hot and creamy.
