ONE-POT CREAMY CHICKEN PASTA WITH GARLIC PARMESAN SAUCE AND SUN-DRIED TOMATOES

This One-Pot Creamy Chicken Pasta is the ultimate comfort food. Tender chicken, perfectly cooked pasta, spinach, and sun-dried tomatoes are coated in a rich garlic Parmesan sauce for a hearty and satisfying meal that’s ready with minimal cleanup.

Ingredients

  • 2 tbsp olive oil
  • 2 chicken breasts, diced
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper to taste
  • 3 cups (720 ml) chicken broth
  • 1 cup (240 ml) heavy cream
  • 12 oz (340 g) penne pasta
  • 1 cup (50 g) fresh spinach
  • ½ cup (80 g) sun-dried tomatoes, chopped
  • 1 cup (100 g) grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet or deep pan over medium-high heat.
  2. Add diced chicken, season with salt, pepper, paprika, and Italian seasoning.
  3. Cook for 5–6 minutes until golden and cooked through.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and heavy cream.
  6. Add the uncooked penne pasta and stir well.
  7. Bring to a gentle boil.
  8. Reduce heat to medium-low.
  9. Cover and cook for 12–15 minutes, stirring occasionally, until the pasta is tender.
  10. Stir in spinach and sun-dried tomatoes.
  11. Add Parmesan cheese and mix until melted and creamy.
  12. Simmer for 2 minutes until the sauce thickens.
  13. Garnish with fresh parsley and extra Parmesan.
  14. Serve immediately while hot and creamy.
