Crispy Smashed Potatoes with Feta, Sun-Dried Tomatoes & Hot Honey

Ingredients

  • 1.5 lb (700 g) baby potatoes
  • 2 tbsp olive oil
  • Salt and black pepper
  • ½ cup crumbled feta cheese
  • ⅓ cup chopped sun-dried tomatoes
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp hot honey

Instructions

  1. Boil potatoes until fork-tender, about 15 minutes.
  2. Drain and let cool slightly.
  3. Place on a baking sheet and gently smash each potato.
  4. Brush with olive oil and season with salt and pepper.
  5. Bake at 425°F (220°C) for 25–30 minutes until crispy and golden.
  6. Top with feta, sun-dried tomatoes, and parsley.
  7. Drizzle with hot honey before serving.
