Ingredients
- 1.5 lb (700 g) baby potatoes
- 2 tbsp olive oil
- Salt and black pepper
- ½ cup crumbled feta cheese
- ⅓ cup chopped sun-dried tomatoes
- 2 tbsp fresh parsley, chopped
- 2 tbsp hot honey
Instructions
- Boil potatoes until fork-tender, about 15 minutes.
- Drain and let cool slightly.
- Place on a baking sheet and gently smash each potato.
