This One-Pot Cheesy Taco Rice is the ultimate easy weeknight dinner! Made with seasoned ground beef, fluffy rice, black beans, sweet corn, juicy tomatoes, and plenty of gooey melted cheddar cheese, this hearty one-pan meal is packed with bold Tex-Mex flavors. Ready in just 30 minutes, it’s a family favorite that’s perfect for busy nights and meal prep.

Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup uncooked long-grain rice
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups beef broth
  • 1½ cups shredded cheddar cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Fresh cilantro, for garnish
  • Sliced green onions, optional

Instructions

  1. Heat a large skillet over medium heat. Add the ground beef and cook until browned. Drain excess fat if necessary.
  2. Add the onion and garlic and cook for 2 minutes until softened.
  3. Stir in the taco seasoning.
  4. Add the rice, diced tomatoes, black beans, corn, and beef broth. Stir to combine.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes, or until the rice is tender.
  6. Sprinkle the shredded cheddar cheese evenly over the top. Cover for 2–3 minutes until melted.
  7. Garnish with cilantro and green onions and serve hot.
