Ingredients
- 1½ pounds (700 g) fresh sardines, cleaned
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- Zest of 1 lemon
- Juice of ½ lemon
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- ½ teaspoon cumin
- Salt and black pepper, to taste
- Fresh parsley, chopped
- Lemon wedges, for serving
Instructions
1. Prepare the Sardines
Pat the sardines dry with paper towels and place them on a baking sheet lined with parchment paper.
2. Season
In a small bowl, combine olive oil, garlic, lemon zest, lemon juice, paprika, oregano, cumin, salt, and pepper.
Brush the mixture over the sardines.
3. Roast
Preheat the oven to 425°F (220°C).
Roast for 15–18 minutes until the skin is crispy and golden.
For extra crispiness, broil for 2–3 minutes.
4. Serve
Sprinkle with fresh parsley and serve with lemon wedges.
