HEALTHY HONEY CARAMELIZED CARROTS WITH WHIPPED FETA AND HERBS

These Healthy Honey Caramelized Carrots with Whipped Feta are sweet, savory, and packed with flavor. Roasted until tender and glazed with honey, the carrots are served over creamy whipped feta and finished with fresh herbs and crunchy nuts for an elegant side dish or light vegetarian meal. Ingredients

For the Carrots

  • 1 pound (450 g) rainbow or regular carrots, peeled
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • ½ teaspoon smoked paprika
  • Salt and black pepper, to taste

For the Whipped Feta

  • 5 ounces (150 g) feta cheese
  • ¼ cup Greek yogurt
  • 1 tablespoon olive oil

For Garnish

  • Fresh parsley or mint, chopped
  • 2 tablespoons chopped pistachios or walnuts
  • Extra honey for drizzling

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss the carrots with olive oil, honey, paprika, salt, and pepper.
  3. Roast for 25–30 minutes, turning halfway, until caramelized and tender.
  4. Blend the feta, Greek yogurt, and olive oil until smooth.
  5. Spread the whipped feta onto a serving plate.
  6. Arrange the roasted carrots on top.
  7. Finish with herbs, chopped pistachios, and a drizzle of honey.
