Ingredients
For the Lamb Chops
- 8 lamb chops
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1 tbsp fresh rosemary, chopped
- 1 tsp fresh thyme
- 1 tsp salt
- ½ tsp black pepper
For the Garlic Mashed Potatoes
- 2 lbs (900 g) Yukon Gold potatoes
- 4 tbsp butter
- ½ cup heavy cream
- 3 garlic cloves, roasted
- Salt and pepper to taste
Herb Butter Sauce
- 3 tbsp butter
- 1 garlic clove, minced
- 1 tsp fresh thyme
- 1 tsp rosemary
- 1 tbsp lemon juice
Instructions
- Combine olive oil, garlic, rosemary, thyme, salt, and pepper.
- Rub the mixture over the lamb chops and marinate for 30 minutes.
- Boil potatoes until tender, about 15 minutes.
- Drain and mash with butter, cream, roasted garlic, salt, and pepper.
- Heat a grill pan over medium-high heat.
- Grill lamb chops for 3–4 minutes per side for medium-rare.
- Melt butter in a small saucepan.
- Add garlic, thyme, rosemary, and lemon juice.
- Simmer for 1 minute.
- Arrange mashed potatoes on a serving plate.
- Place lamb chops on top and drizzle with herb butter sauce.
- Garnish with rosemary sprigs and roasted garlic cloves.
