JUICY GRILLED LAMB CHOPS WITH GARLIC MASHED POTATOES AND HERB BUTTER

Ingredients

For the Lamb Chops

  • 8 lamb chops
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tsp fresh thyme
  • 1 tsp salt
  • ½ tsp black pepper

For the Garlic Mashed Potatoes

  • 2 lbs (900 g) Yukon Gold potatoes
  • 4 tbsp butter
  • ½ cup heavy cream
  • 3 garlic cloves, roasted
  • Salt and pepper to taste

Herb Butter Sauce

  • 3 tbsp butter
  • 1 garlic clove, minced
  • 1 tsp fresh thyme
  • 1 tsp rosemary
  • 1 tbsp lemon juice

Instructions

  1. Combine olive oil, garlic, rosemary, thyme, salt, and pepper.
  2. Rub the mixture over the lamb chops and marinate for 30 minutes.
  3. Boil potatoes until tender, about 15 minutes.
  4. Drain and mash with butter, cream, roasted garlic, salt, and pepper.
  5. Heat a grill pan over medium-high heat.
  6. Grill lamb chops for 3–4 minutes per side for medium-rare.
  7. Melt butter in a small saucepan.
  8. Add garlic, thyme, rosemary, and lemon juice.
  9. Simmer for 1 minute.
  10. Arrange mashed potatoes on a serving plate.
  11. Place lamb chops on top and drizzle with herb butter sauce.
  12. Garnish with rosemary sprigs and roasted garlic cloves.
