This Creamy Herb Chicken Gnocchi Skillet is the ultimate comfort food. Tender golden chicken, pillowy gnocchi, sun-dried tomatoes, and fresh spinach are coated in a rich Parmesan cream sauce for a cozy one-pan dinner that’s packed with flavor and ready in no time.
Ingredients
- 500 g (1 lb) potato gnocchi
- 2 chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 2 tbsp butter
- 3 garlic cloves, minced
- 1 cup sun-dried tomatoes, sliced
- 2 cups fresh spinach
- 1½ cups heavy cream
- ½ cup chicken broth
- 1 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
- Fresh parsley, for garnish
Instructions
- Season the chicken with paprika, salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken and cook for 5–7 minutes until golden brown and cooked through. Remove and set aside.
- In the same skillet, melt the butter and sauté the garlic for 30 seconds until fragrant.
- Add the sun-dried tomatoes and cook for 1 minute.
- Pour in the chicken broth and heavy cream, stirring well.
- Add the Parmesan cheese and stir until melted and smooth.
- Add the gnocchi directly to the sauce and simmer for 4–5 minutes until tender.
- Stir in the spinach and cook until wilted.
- Return the chicken to the skillet and mix everything together.
- Simmer for 2–3 more minutes until the sauce thickens.
- Garnish with extra Parmesan and fresh parsley before serving.
