CREAMY HERB CHICKEN GNOCCHI SKILLET WITH SUN-DRIED TOMATOES AND PARMESAN

This Creamy Herb Chicken Gnocchi Skillet is the ultimate comfort food. Tender golden chicken, pillowy gnocchi, sun-dried tomatoes, and fresh spinach are coated in a rich Parmesan cream sauce for a cozy one-pan dinner that’s packed with flavor and ready in no time.

Ingredients

  • 500 g (1 lb) potato gnocchi
  • 2 chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 garlic cloves, minced
  • 1 cup sun-dried tomatoes, sliced
  • 2 cups fresh spinach
  • 1½ cups heavy cream
  • ½ cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and black pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken with paprika, salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken and cook for 5–7 minutes until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, melt the butter and sauté the garlic for 30 seconds until fragrant.
  5. Add the sun-dried tomatoes and cook for 1 minute.
  6. Pour in the chicken broth and heavy cream, stirring well.
  7. Add the Parmesan cheese and stir until melted and smooth.
  8. Add the gnocchi directly to the sauce and simmer for 4–5 minutes until tender.
  9. Stir in the spinach and cook until wilted.
  10. Return the chicken to the skillet and mix everything together.
  11. Simmer for 2–3 more minutes until the sauce thickens.
  12. Garnish with extra Parmesan and fresh parsley before serving.
