These Creamy Coconut Curry Meatballs are tender, juicy, and simmered in a rich coconut curry sauce bursting with flavor. Served over fluffy rice, this comforting one-pan meal is easy to make and perfect for busy weeknights when you want something warm, creamy, and satisfying.

Ingredients

  • 1 lb (450 g) ground beef or chicken
  • 1 egg
  • ½ cup breadcrumbs
  • 2 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil

Coconut Curry Sauce

  • 1 tbsp curry powder
  • 1 can (13.5 oz) coconut milk
  • 1 small onion, diced
  • 1 red bell pepper, sliced
  • 1 tbsp tomato paste
  • 1 cup fresh spinach
  • Salt and pepper to taste

For Serving

  • Cooked jasmine rice
  • Fresh cilantro

Instructions

  1. In a bowl, combine ground meat, egg, breadcrumbs, garlic, salt, and pepper.
  2. Shape into meatballs.
  3. Heat olive oil in a skillet and brown the meatballs on all sides.
  4. Remove and set aside.
  5. In the same skillet, cook onion and bell pepper until softened.
  6. Stir in curry powder and tomato paste.
  7. Pour in coconut milk and bring to a gentle simmer.
  8. Return meatballs to the skillet and cook for 10–12 minutes.
  9. Add spinach and cook until wilted.
  10. Serve over rice and garnish with fresh cilantro.
