These Creamy Coconut Curry Meatballs are tender, juicy, and simmered in a rich coconut curry sauce bursting with flavor. Served over fluffy rice, this comforting one-pan meal is easy to make and perfect for busy weeknights when you want something warm, creamy, and satisfying.
Ingredients
- 1 lb (450 g) ground beef or chicken
- 1 egg
- ½ cup breadcrumbs
- 2 garlic cloves, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
Coconut Curry Sauce
- 1 tbsp curry powder
- 1 can (13.5 oz) coconut milk
- 1 small onion, diced
- 1 red bell pepper, sliced
- 1 tbsp tomato paste
- 1 cup fresh spinach
- Salt and pepper to taste
For Serving
- Cooked jasmine rice
- Fresh cilantro
Instructions
- In a bowl, combine ground meat, egg, breadcrumbs, garlic, salt, and pepper.
- Shape into meatballs.
- Heat olive oil in a skillet and brown the meatballs on all sides.
- Remove and set aside.
- In the same skillet, cook onion and bell pepper until softened.
- Stir in curry powder and tomato paste.
- Pour in coconut milk and bring to a gentle simmer.
- Return meatballs to the skillet and cook for 10–12 minutes.
- Add spinach and cook until wilted.
- Serve over rice and garnish with fresh cilantro.
