Ingredients
- 4 large yellow onions, thinly sliced
- 3 tbsp butter
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 6 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme
- Salt and black pepper to taste
- 4 small round sourdough bread bowls
- 2 cups shredded Gruyère cheese
- Fresh thyme for garnish
Instructions
- Heat butter and olive oil in a large pot over medium heat.
- Add sliced onions and cook for 35–40 minutes, stirring occasionally, until deeply caramelized.
- Stir in garlic and cook for 1 minute.
- Add beef broth, Worcestershire sauce, thyme, salt, and pepper.
- Simmer for 20 minutes.
- Cut the tops off the sourdough bread bowls and hollow out the centers.
- Fill each bread bowl with hot onion soup.
- Sprinkle generously with Gruyère cheese.
