Tender chicken breasts topped with sautéed mushrooms, melted cheese, and a rich Madeira wine sauce. This Easy Chicken Madeira is a restaurant-quality dinner that’s surprisingly simple to make at home and perfect for busy weeknights or special occasions.
Ingredients
- 4 chicken breasts
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 8 oz (225 g) mushrooms, sliced
- 2 garlic cloves, minced
- 1 cup Madeira wine (or chicken broth)
- 1 cup chicken broth
- 1 tbsp butter
- 1 cup shredded mozzarella cheese
- 1 bunch asparagus, trimmed
- Fresh parsley for garnish
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a skillet and cook chicken until golden and cooked through. Remove and set aside.
- In the same skillet, sauté mushrooms until tender.
- Add garlic and cook for 30 seconds.
- Pour in Madeira wine and chicken broth. Simmer until slightly reduced.
- Stir in butter.
- Return chicken to the skillet and top each piece with mozzarella cheese.
- Add asparagus around the chicken.
- Cover and cook until the cheese melts and asparagus is tender.
- Garnish with parsley and serve warm.
