EASY CHICKEN MADEIRA WITH CREAMY MUSHROOM SAUCE AND MELTED MOZZARELLA

Tender chicken breasts topped with sautéed mushrooms, melted cheese, and a rich Madeira wine sauce. This Easy Chicken Madeira is a restaurant-quality dinner that’s surprisingly simple to make at home and perfect for busy weeknights or special occasions.

Ingredients

  • 4 chicken breasts
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 8 oz (225 g) mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 cup Madeira wine (or chicken broth)
  • 1 cup chicken broth
  • 1 tbsp butter
  • 1 cup shredded mozzarella cheese
  • 1 bunch asparagus, trimmed
  • Fresh parsley for garnish

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a skillet and cook chicken until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté mushrooms until tender.
  4. Add garlic and cook for 30 seconds.
  5. Pour in Madeira wine and chicken broth. Simmer until slightly reduced.
  6. Stir in butter.
  7. Return chicken to the skillet and top each piece with mozzarella cheese.
  8. Add asparagus around the chicken.
  9. Cover and cook until the cheese melts and asparagus is tender.
  10. Garnish with parsley and serve warm.
