Creamy Tuscan Chicken Pasta with Spinach and Sun-Dried Tomatoes

This Creamy Tuscan Chicken Pasta is loaded with tender chicken, fresh spinach, and tangy sun-dried tomatoes, all tossed in a rich garlic Parmesan cream sauce. Made in one pot, it’s the perfect comforting dinner for busy weeknights.

Ingredients

  • 2 chicken breasts, diced
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 8 oz (225 g) penne pasta
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Cook chicken until golden brown, about 5–6 minutes.
  4. Add garlic and cook for 30 seconds.
  5. Stir in pasta, chicken broth, and cream.
  6. Bring to a gentle simmer and cook for 12–15 minutes, stirring occasionally.
  7. Add Parmesan cheese, spinach, and sun-dried tomatoes.
  8. Stir until the spinach wilts and the sauce becomes creamy.
  9. Adjust seasoning if needed.
  10. Garnish with fresh parsley and serve warm.
