Ingredients
For the Salad
- 2 grilled chicken breasts, sliced
- 1 English cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup Kalamata olives
- 1/2 cup crumbled feta cheese
- 2 tbsp fresh dill, chopped
- 1 tbsp fresh parsley, chopped
For the Whipped Feta Dressing
- 200 g feta cheese
- 1/3 cup Greek yogurt
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 garlic clove
- Black pepper to taste
Instructions
- Add feta, Greek yogurt, olive oil, lemon juice, garlic, and black pepper to a food processor.
- Blend until smooth and creamy.
- In a large bowl, combine cucumber, tomatoes, red onion, olives, feta, dill, and parsley.
- Add sliced grilled chicken.
- Spoon the whipped feta dressing over the salad.
- Toss gently until everything is coated.
- Garnish with extra feta, fresh herbs, and a squeeze of lemon.
