Garlic Butter Green Beans & Roasted Chicken Bowl

Tender garlic butter green beans, juicy roasted chicken, and crispy golden potatoes come together in this wholesome and flavorful meal. Easy to prepare and packed with comforting flavors, it’s the perfect family dinner for busy weeknights.

Ingredients

  • 2 chicken breasts, sliced
  • 400 g (14 oz) green beans, trimmed
  • 500 g (1 lb) baby potatoes, halved
  • 3 tbsp olive oil
  • 3 tbsp butter
  • 4 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste
  • 1 tbsp fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the baby potatoes with 1 tablespoon olive oil, salt, pepper, and half of the Italian seasoning. Roast for 25–30 minutes until golden and crispy.
  3. Season the chicken with paprika, remaining Italian seasoning, salt, and pepper.
  4. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook the chicken for 5–6 minutes per side until golden and fully cooked. Set aside.
  5. In the same skillet, melt the butter and sauté the garlic for 30 seconds.
  6. Add the green beans and cook for 5–7 minutes, stirring occasionally until tender-crisp.
  7. Return the chicken to the skillet and toss gently with the green beans.
  8. Serve with the roasted potatoes and sprinkle with fresh parsley.
