Ingredients
- 2 tbsp olive oil
- 1 small onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 2 cans (15 oz / 425 g each) white beans, drained and rinsed
- 4 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and black pepper, to taste
- 2 tbsp fresh parsley, chopped
- Fresh thyme for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onion, carrots, and celery. Cook for 5–6 minutes until softened.
- Stir in the garlic and cook for 30 seconds.
- Add the white beans, vegetable broth, thyme, Italian seasoning, paprika, salt, and pepper.
- Bring to a boil, then reduce the heat and simmer for 20–25 minutes.
- Blend about one-third of the soup using an immersion blender for a creamier texture, leaving some beans whole.
- Stir in the fresh parsley.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh thyme, parsley, and a light sprinkle of paprika.
