FRESH PEACH SALAD WITH GOAT CHEESE, WALNUTS AND HONEY VINAIGRETTE

Ingredients

For the Salad

  • 3 ripe peaches, sliced
  • 4 cups arugula or mixed greens
  • ½ small red onion, thinly sliced
  • ½ cup crumbled goat cheese or feta cheese
  • ⅓ cup walnuts, toasted
  • Fresh mint leaves (optional)

For the Honey Vinaigrette
