CREAMY SKILLET CHICKEN AND WHITE BEANS WITH TOMATOES

This Creamy Skillet Chicken and White Beans is the ultimate one-pan comfort meal. Golden seared chicken thighs are simmered in a rich garlic cream sauce with tender white beans, juicy tomatoes, and fresh spinach. Ingredients

  • 4 boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 2 cups white beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 cup chicken broth
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Season the chicken with paprika, Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the chicken for 4–5 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, sauté the onion until softened. Add garlic and cook for 30 seconds.
  5. Stir in the white beans, cherry tomatoes, chicken broth, and cream.
  6. Add spinach and cook until wilted.
  7. Return the chicken to the skillet and simmer for 10–12 minutes until fully cooked.
  8. Stir in Parmesan cheese and garnish with fresh parsley.
  9. Serve hot with crusty bread or rice.
