These Cheesy Mini Quesadillas are loaded with melted cheese and served with a rich, creamy queso dip. Crispy on the outside and irresistibly gooey on the inside, they’re the perfect appetizer, game day snack, or party food.
Ingredients
For the Mini Quesadillas
- 8 small flour tortillas
- 2 cups shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 cup cooked shredded chicken (optional)
- 1 small red bell pepper, diced
- 2 tbsp chopped cilantro
- 1 tsp taco seasoning
- 1 tbsp butter
For the Queso Dip
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 1 cup whole milk
- 1 cup shredded cheddar cheese
- ½ cup Monterey Jack cheese
- ½ tsp garlic powder
- ¼ tsp smoked paprika
- Salt to taste
Instructions
Make the Queso Dip
- Melt butter in a saucepan over medium heat.
- Whisk in flour and cook for 1 minute.
- Slowly add milk while whisking continuously.
- Cook until slightly thickened.
- Add cheddar, Monterey Jack, garlic powder, and paprika.
- Stir until smooth and creamy.
- Keep warm.
Make the Mini Quesadillas
- Mix cheeses, chicken, bell pepper, cilantro, and taco seasoning in a bowl.
- Place filling on half of each tortilla and fold over.
- Melt butter in a skillet over medium heat.
- Cook quesadillas for 2–3 minutes per side until golden and crispy.
- Cut each quesadilla into mini triangles.
Serve
- Arrange mini quesadillas around a bowl of warm queso dip.
- Garnish with cilantro and sliced jalapeños.
- Serve immediately while the cheese is melty.
