Ingredients

  • 2 tbsp butter
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups (960 ml) chicken broth
  • 2 cups cooked shredded chicken
  • 1 packet ranch seasoning mix
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (100 g) shredded cheddar cheese
  • ½ cup (120 ml) heavy cream
  • 6 slices bacon, cooked and crumbled
  • 2 green onions, sliced
  • Salt and black pepper to taste

Instructions

  1. Melt butter in a large soup pot over medium heat.
  2. Add onion and cook for 4 minutes until softened.
  3. Stir in garlic and cook for 30 seconds.
  4. Pour in chicken broth.
  5. Add shredded chicken and ranch seasoning.
  6. Bring to a gentle simmer for 10 minutes.
  7. Add cream cheese and whisk until fully melted.
  8. Stir in cheddar cheese and heavy cream.
