This Authentic Turkish Pide features a soft, golden crust shaped into a traditional boat and filled with savory seasoned beef, melted cheese, and aromatic spices. Ingredients
For the Dough
- 3 cups (375 g) all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 2¼ tsp instant yeast
- 1 cup (240 ml) warm water
- 2 tbsp olive oil
For the Beef Filling
- 1 lb (450 g) ground beef
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 1 tomato, finely diced
- 1 tbsp tomato paste
- 1 tsp paprika
- ½ tsp cumin
- ½ tsp black pepper
- 1 tsp salt
- 2 tbsp chopped parsley
For Topping
- 1½ cups shredded mozzarella cheese
- 1 egg yolk
- 1 tbsp milk
Instructions
- Combine warm water, sugar, and yeast in a bowl. Let sit for 5 minutes.
- Add flour, salt, and olive oil.
- Knead for 8–10 minutes until smooth.
- Cover and let rise for 1 hour.
- In a skillet, cook the onion and garlic for 3 minutes.
- Add the ground beef and cook until browned.
- Stir in tomato, tomato paste, paprika, cumin, salt, and pepper.
- Cook for 5 minutes and remove from heat.
- Stir in parsley and let cool.
- Preheat oven to 425°F (220°C).
- Divide dough into 2 or 3 portions.
- Roll each into an oval shape.
- Place on a parchment-lined baking sheet.
- Spread the beef mixture down the center.
- Sprinkle generously with mozzarella cheese.
- Fold the edges inward to create the traditional boat shape.
- Pinch both ends.
- Mix egg yolk with milk and brush the crust.
- Bake for 15–18 minutes until golden brown.
- Serve hot with fresh parsley and a squeeze of lemon.
