AUTHENTIC TURKISH PIDE RECIPE WITH MELTED CHEESE AND SAVORY BEEF TOPPING

Ingredients

For the Dough

  • 3 cups (375 g) all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 2¼ tsp instant yeast
  • 1 cup (240 ml) warm water
  • 2 tbsp olive oil

For the Beef Filling

  • 1 lb (450 g) ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tomato, finely diced
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp black pepper
  • 1 tsp salt
  • 2 tbsp chopped parsley

For Topping

  • 1½ cups shredded mozzarella cheese
  • 1 egg yolk
  • 1 tbsp milk

Instructions

  1. Combine warm water, sugar, and yeast in a bowl. Let sit for 5 minutes.
  2. Add flour, salt, and olive oil.
  3. Knead for 8–10 minutes until smooth.
  4. Cover and let rise for 1 hour.
  5. In a skillet, cook the onion and garlic for 3 minutes.
  6. Add the ground beef and cook until browned.
  7. Stir in tomato, tomato paste, paprika, cumin, salt, and pepper.
  8. Cook for 5 minutes and remove from heat.
  9. Stir in parsley and let cool.
  10. Preheat oven to 425°F (220°C).
  11. Divide dough into 2 or 3 portions.
  12. Roll each into an oval shape.
  13. Place on a parchment-lined baking sheet.
  14. Spread the beef mixture down the center.
  15. Sprinkle generously with mozzarella cheese.
  16. Fold the edges inward to create the traditional boat shape.
  17. Pinch both ends.
  18. Mix egg yolk with milk and brush the crust.
  19. Bake for 15–18 minutes until golden brown.
  20. Serve hot with fresh parsley and a squeeze of lemon.
