These Spicy Coffee Beef Tacos combine smoky coffee-rubbed beef, charred tortillas, grilled corn, fresh pico de gallo, jalapeños, and a creamy chipotle sauce. Packed with bold flavor and fresh summer ingredients, they’re perfect for taco night, cookouts, or an easy weeknight dinner.
Ingredients
For the Coffee Beef
- 1½ lb (680 g) flank steak or sirloin steak
- 1 tbsp finely ground coffee
- 1 tsp smoked paprika
- 1 tsp chili powder
- ½ tsp cumin
- ½ tsp garlic powder
- 1 tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
For the Tacos
- 8 corn tortillas
- 1 cup shredded Monterey Jack cheese
- 1 cup grilled corn kernels
- 1 jalapeño, sliced
- ½ cup diced red onion
- 1 cup diced tomatoes
- ¼ cup fresh cilantro
Chipotle Sauce
- ½ cup sour cream
- 1 tbsp mayonnaise
- 1 chipotle pepper in adobo, minced
- 1 tsp lime juice
- Pinch of salt
Instructions
- In a small bowl, combine coffee, paprika, chili powder, cumin, garlic powder, salt, and pepper.
- Rub the seasoning mixture all over the steak.
- Heat olive oil in a skillet over medium-high heat.
- Cook steak for 4–5 minutes per side until nicely charred.
- Let rest for 5 minutes, then slice into thin strips.
- Mix all chipotle sauce ingredients until smooth.
- Warm the tortillas and lightly char them over a flame or hot skillet.
- Sprinkle a little cheese into each tortilla and let it melt.
- Fill with sliced coffee beef.
- Top with grilled corn, tomatoes, red onion, jalapeños, and cilantro.
- Drizzle generously with chipotle sauce.
- Serve immediately with fresh lime wedges.
