Ingredients
For the Mochi Dough
- 1 cup (120 g) glutinous rice flour
- ¼ cup (50 g) sugar
- 1 cup (240 ml) milk
- 1 tbsp vegetable oil
- Cornstarch, for dusting
For the Filling
- 1 ripe mango, diced
- ½ cup (120 ml) heavy cream
- 2 tbsp powdered sugar
- ½ tsp vanilla extract
Instructions
- Whip the heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Fold in some of the diced mango and refrigerate for 30 minutes.
- In a microwave-safe bowl, mix glutinous rice flour, sugar, milk, and oil until smooth.
- Cover loosely and microwave for 2 minutes.
- Stir well and microwave for another 1–2 minutes until the dough becomes thick and translucent.
- Dust a work surface with cornstarch.
- Transfer the warm mochi dough and let it cool slightly.
- Divide into 6 equal portions and flatten each into a circle.
- Place a spoonful of whipped cream filling and a few mango cubes in the center.
- Carefully pinch the edges together to seal.
- Turn the mochi seam-side down and shape into smooth rounds.
- Chill for 20–30 minutes before serving.
