CREAMY SPINACH AND MUSHROOM PASTA WITH GARLIC PARMESAN SAUCE

This Creamy Spinach and Mushroom Pasta is a comforting and flavorful dish made with tender mushrooms, fresh spinach, and pasta tossed in a rich garlic Parmesan cream sauce. It’s an easy weeknight dinner that feels restaurant-worthy while coming together in just 30 minutes.

Ingredients

  • 12 oz (340 g) pasta
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 10 oz (300 g) mushrooms, sliced
  • 3 garlic cloves, minced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • ¾ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook pasta according to package directions. Reserve ½ cup pasta water.
  2. Heat butter and olive oil in a large skillet.
  3. Add mushrooms and cook until golden brown.
  4. Stir in garlic and cook for 30 seconds.
  5. Add spinach and cook until wilted.
  6. Pour in heavy cream and bring to a gentle simmer.
  7. Stir in Parmesan cheese until smooth.
  8. Add cooked pasta and toss to coat.
  9. Add reserved pasta water if needed to loosen the sauce.
  10. Garnish with parsley and serve immediately.
