Fresh, vibrant, and bursting with Mediterranean flavors, this Authentic Lebanese Tabbouleh Salad is made with finely chopped parsley, juicy tomatoes, bulgur, fresh mint, lemon juice, and olive oil. Light, healthy, and refreshing, it’s the perfect side dish for grilled meats, wraps, or mezze platters.
- 3 cups fresh parsley, finely chopped
- 2 medium tomatoes, diced
- 3 tbsp fine bulgur wheat
- ¼ cup fresh mint, finely chopped
- 2 green onions, finely sliced
- 4 tbsp fresh lemon juice
- 4 tbsp extra virgin olive oil
- ½ tsp salt
- ¼ tsp black pepper
Instructions
- Soak the bulgur in cold water for 15 minutes, then drain well.
- Finely chop the parsley and mint.
- Dice the tomatoes and slice the green onions.
- In a large bowl, combine parsley, mint, tomatoes, green onions, and bulgur.
- Drizzle with olive oil and fresh lemon juice.
- Season with salt and black pepper.
- Toss gently until everything is evenly coated.
- Refrigerate for 15–30 minutes before serving for the best flavor.
Tip: Authentic Lebanese tabbouleh contains much more parsley than bulgur, giving it its signature fresh green appearance.
