Ingredients

  • 1 kg pumpkin, peeled and cubed
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 cups vegetable broth
  • ½ cup heavy cream
  • 1 tbsp olive oil
  • ½ tsp paprika
  • ¼ tsp nutmeg
  • Salt and black pepper
  • Pumpkin seeds for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion for 4–5 minutes until soft.
  3. Add garlic and cook for 30 seconds.
  4. Add pumpkin cubes, paprika, nutmeg, salt, and pepper.
  5. Pour in the vegetable broth.
  6. Bring to a boil, then simmer for 20–25 minutes until pumpkin is tender.
  7. Blend until completely smooth.
  8. Stir in the cream and heat gently for 2 minutes.
