Ingredients
- 2 cups (500 ml) heavy cream
- 5 egg yolks
- 1/3 cup (70 g) granulated sugar
- 1 tsp vanilla extract
- Pinch of salt
- 3 tbsp sugar (for caramelized topping)
Instructions
- Preheat oven to 325°F (160°C).
- Heat the cream in a saucepan until warm but not boiling.
- In a bowl, whisk egg yolks, sugar, vanilla, and salt.
- Slowly pour the warm cream into the egg mixture while whisking continuously.
- Strain the mixture and divide it among 4 ramekins.
- Place ramekins in a baking dish and fill the dish with hot water halfway up the sides.
- Bake for 30–35 minutes, until the centers are just set.
- Cool completely, then refrigerate for at least 4 hours.
- Sprinkle sugar evenly on top and caramelize with a kitchen torch until golden and crisp.
- Let sit for 2 minutes before serving.
