Ultimate Vanilla Crème Brûlée

Ingredients

  • 2 cups (500 ml) heavy cream
  • 5 egg yolks
  • 1/3 cup (70 g) granulated sugar
  • 1 tsp vanilla extract
  • Pinch of salt
  • 3 tbsp sugar (for caramelized topping)

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Heat the cream in a saucepan until warm but not boiling.
  3. In a bowl, whisk egg yolks, sugar, vanilla, and salt.
  4. Slowly pour the warm cream into the egg mixture while whisking continuously.
  5. Strain the mixture and divide it among 4 ramekins.
  6. Place ramekins in a baking dish and fill the dish with hot water halfway up the sides.
  7. Bake for 30–35 minutes, until the centers are just set.
  8. Cool completely, then refrigerate for at least 4 hours.
  9. Sprinkle sugar evenly on top and caramelize with a kitchen torch until golden and crisp.
  10. Let sit for 2 minutes before serving.
