Irresistible Russian Salad Bowl

A creamy and colorful Russian Salad made with tender potatoes, carrots, peas, and eggs tossed in a rich mayonnaise dressing. This refreshing salad is perfect for gatherings, barbecues, or as a delicious side dish any time of the year.

Ingredients

  • 3 medium potatoes, peeled and diced
  • 2 carrots, diced
  • 1 cup green peas
  • 4 hard-boiled eggs, chopped
  • 1/2 cup sweet pickles, diced
  • 3/4 cup mayonnaise
  • 1 tbsp Dijon mustard (optional)
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil potatoes and carrots until tender, about 10–12 minutes.
  2. Cook peas for 2–3 minutes and drain.
  3. Let all vegetables cool completely.
  4. In a large bowl, combine potatoes, carrots, peas, eggs, and pickles.
  5. Mix mayonnaise, mustard, salt, and pepper in a small bowl.
  6. Pour the dressing over the vegetables and gently toss.
  7. Refrigerate for at least 1 hour before serving.
  8. Garnish with parsley and enjoy.
