Ingredients
- 3 medium potatoes, peeled and diced
- 2 carrots, diced
- 1 cup green peas
- 4 hard-boiled eggs, chopped
- 1/2 cup sweet pickles, diced
- 3/4 cup mayonnaise
- 1 tbsp Dijon mustard (optional)
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Boil potatoes and carrots until tender, about 10–12 minutes.
- Cook peas for 2–3 minutes and drain.
- Let all vegetables cool completely.
- In a large bowl, combine potatoes, carrots, peas, eggs, and pickles.
- Mix mayonnaise, mustard, salt, and pepper in a small bowl.
- Pour the dressing over the vegetables and gently toss.
