Ultimate Brazilian Chocolate Dream Cake

This irresistible Brazilian Chocolate Dream Cake combines a rich, moist chocolate base with a silky brigadeiro mousse layer and a glossy chocolate ganache topping. Ingredients

Chocolate Cake

  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 2 eggs
  • ¾ cup sugar
  • ½ cup milk
  • ⅓ cup vegetable oil
  • 1 tsp vanilla extract

Brigadeiro Mousse Layer

  • 1 can (397g) sweetened condensed milk
  • 2 tbsp butter
  • 3 tbsp cocoa powder
  • 1 cup heavy cream

Chocolate Ganache

  • 200g semi-sweet chocolate
  • ¾ cup heavy cream

Instructions

1. Bake the Cake

  1. Preheat oven to 350°F (180°C).
  2. Mix flour, cocoa, baking powder, and baking soda.
  3. In another bowl, whisk eggs, sugar, milk, oil, and vanilla.
  4. Combine wet and dry ingredients.
  5. Pour into a greased 8-inch (20 cm) round pan.
  6. Bake for 25–30 minutes. Let cool completely.

2. Make the Brigadeiro Mousse

  1. In a saucepan, combine condensed milk, butter, and cocoa.
  2. Cook over low heat, stirring constantly for 8–10 minutes.
  3. Cool completely.
  4. Fold in the whipped heavy cream until smooth.

3. Prepare the Ganache

  1. Heat the cream until hot but not boiling.
  2. Pour over chopped chocolate.
  3. Let sit for 2 minutes, then stir until silky smooth.

4. Assemble

  1. Spread the brigadeiro mousse over the cooled cake.
  2. Refrigerate for 1 hour.
  3. Pour ganache on top.
  4. Create a decorative chocolate pattern if desired.
  5. Chill for at least 3 hours before serving.
