Ingredients
- 400 ml coconut milk
- 200 ml heavy cream
- 60 g sugar
- 1 tsp vanilla extract
- 6 g gelatin powder (or 3 gelatin sheets)
Toppings
- Toasted coconut flakes
- Mango cubes
- Passion fruit pulp
- Fresh mint leaves
Preparation (Thermomix)
- Place coconut milk, cream, sugar, and vanilla in the Thermomix bowl.
- Heat 8 min / 80°C / speed 3.
- Add softened gelatin.
- Mix 20 sec / speed 4.
- Pour into 6 dessert glasses.
- Refrigerate for at least 4 hours.
To Serve
- Top with toasted coconut flakes.
- Add fresh mango cubes or passion fruit.
- Garnish with mint leaves.
