Surprise Muffins
Ingredients
- 1 ½ cups (190 g) all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (100 g) sugar
- 1 egg
- ½ cup (120 ml) milk
- ⅓ cup (80 ml) vegetable oil
- 1 tsp vanilla extract
- 1 cup fresh raspberries
- 3 tbsp raspberry jam
Instructions
- Preheat oven to 375°F (190°C).
- Grease or line a mini muffin pan.
- In a bowl, mix flour, baking powder, baking soda, salt, and sugar.
- In another bowl, whisk together egg, milk, oil, and vanilla.
- Add wet ingredients to dry ingredients and stir gently.
- Fold in the raspberries.
- Fill each muffin cup halfway.
- Add ½ teaspoon raspberry jam to the center of each muffin.
- Cover with a little more batter.
- Bake for 12–15 minutes or until golden.
- Let cool for 5 minutes before serving.
