Juicy Raspberry Surprise Muffins

Ingredients

  • 1 ½ cups (190 g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (100 g) sugar
  • 1 egg
  • ½ cup (120 ml) milk
  • ⅓ cup (80 ml) vegetable oil
  • 1 tsp vanilla extract
  • 1 cup fresh raspberries
  • 3 tbsp raspberry jam

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease or line a mini muffin pan.
  3. In a bowl, mix flour, baking powder, baking soda, salt, and sugar.
  4. In another bowl, whisk together egg, milk, oil, and vanilla.
  5. Add wet ingredients to dry ingredients and stir gently.
  6. Fold in the raspberries.
  7. Fill each muffin cup halfway.
  8. Add ½ teaspoon raspberry jam to the center of each muffin.
  9. Cover with a little more batter.
  10. Bake for 12–15 minutes or until golden.
  11. Let cool for 5 minutes before serving.

For an extra gooey center, add a little more raspberry jam right before baking.
