Creamy Garlic Parmesan Chicken Pasta

Ingredients

  • 300 g fettuccine or linguine
  • 2 chicken breasts, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese
  • 1/2 tsp Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped
  • Optional: sun-dried tomatoes

Instructions

  1. Cook the pasta according to package instructions. Reserve 1/2 cup pasta water.
  2. Season chicken with salt, pepper, and Italian seasoning.
  3. Heat olive oil in a skillet and cook chicken until golden and fully cooked.
  4. Add garlic and cook for 30 seconds.
  5. Pour in the cream and simmer for 2 minutes.
  6. Stir in Parmesan and mozzarella until smooth and creamy.
  7. Add cooked pasta and toss until fully coated.
  8. Add a little reserved pasta water if needed.
  9. Garnish with parsley and serve immediately.
