Juicy Chicken & Rainbow Veggie Skewers with Garlic Herb Glaze

These juicy Chicken & Veggie Skewers are loaded with tender marinated chicken, colorful bell peppers, zucchini, and red onions grilled to perfection. Ingredients

For the Skewers

  • 600 g (1.3 lb) chicken breast, cut into cubes
  • 2 bell peppers (red and yellow), cut into chunks
  • 1 zucchini, sliced into thick rounds
  • 1 red onion, cut into chunks
  • Wooden skewers

Marinade

  • 3 tbsp olive oil
  • 2 tbsp honey
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • 1 tsp salt
  • 1 tbsp lemon juice

Optional Glaze

  • 2 tbsp honey
  • 1 tbsp barbecue sauce

Instructions

  1. Mix all marinade ingredients in a bowl.
  2. Add chicken and marinate for at least 30 minutes.
  3. Thread chicken and vegetables alternately onto skewers.
  4. Grill or bake at 220°C (425°F) for 20–25 minutes, turning halfway through.
  5. Brush with the honey-barbecue glaze during the last 5 minutes of cooking.
  6. Serve hot and enjoy!
