Ingredients
For the Skewers
- 600 g (1.3 lb) chicken breast, cut into cubes
- 2 bell peppers (red and yellow), cut into chunks
- 1 zucchini, sliced into thick rounds
- 1 red onion, cut into chunks
- Wooden skewers
Marinade
- 3 tbsp olive oil
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tsp paprika
- 1 tsp dried oregano
- ½ tsp black pepper
- 1 tsp salt
- 1 tbsp lemon juice
Optional Glaze
- 2 tbsp honey
- 1 tbsp barbecue sauce
Instructions
- Mix all marinade ingredients in a bowl.
- Add chicken and marinate for at least 30 minutes.
- Thread chicken and vegetables alternately onto skewers.
- Grill or bake at 220°C (425°F) for 20–25 minutes, turning halfway through.
- Brush with the honey-barbecue glaze during the last 5 minutes of cooking.
- Serve hot and enjoy!
