Ingredients
For the Herb Chicken
- 4 boneless chicken breasts
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp paprika
- Salt and black pepper, to taste
For the Creamy Mashed Potatoes
- 800 g (1.8 lb) potatoes, peeled and cubed
- 4 tbsp butter
- ½ cup warm milk
- Salt and pepper, to taste
For the Glazed Carrots
- 4 large carrots, sliced
- 1 tbsp butter
- 1 tbsp honey
- 1 tbsp brown sugar
- Pinch of salt
- Fresh parsley for garnish
Preparation
- Season chicken with olive oil, garlic powder, thyme, rosemary, paprika, salt, and pepper.
- Cook in a skillet over medium heat for 6–7 minutes per side until golden and cooked through.
- Boil potatoes until tender. Drain and mash with butter, warm milk, salt, and pepper.
- Cook carrots in a skillet with butter for 5 minutes. Add honey and brown sugar, then cook until glossy and glazed.
- Serve the herb chicken over creamy mashed potatoes with glazed carrots on the side. Garnish with fresh parsley.
