Herb Chicken with Creamy Mashed Potatoes & Honey-Glazed Carrots 

Tender herb-seasoned chicken served alongside rich, creamy mashed potatoes and sweet honey-glazed carrots. Ingredients

For the Herb Chicken

  • 4 boneless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • Salt and black pepper, to taste

For the Creamy Mashed Potatoes

  • 800 g (1.8 lb) potatoes, peeled and cubed
  • 4 tbsp butter
  • ½ cup warm milk
  • Salt and pepper, to taste

For the Glazed Carrots

  • 4 large carrots, sliced
  • 1 tbsp butter
  • 1 tbsp honey
  • 1 tbsp brown sugar
  • Pinch of salt
  • Fresh parsley for garnish

Preparation

  1. Season chicken with olive oil, garlic powder, thyme, rosemary, paprika, salt, and pepper.
  2. Cook in a skillet over medium heat for 6–7 minutes per side until golden and cooked through.
  3. Boil potatoes until tender. Drain and mash with butter, warm milk, salt, and pepper.
  4. Cook carrots in a skillet with butter for 5 minutes. Add honey and brown sugar, then cook until glossy and glazed.
  5. Serve the herb chicken over creamy mashed potatoes with glazed carrots on the side. Garnish with fresh parsley.
