Ingredients (Serves 6)

- 6 medium potatoes, peeled and diced
- 8 slices bacon, cooked and crumbled
- 2 cups shredded cheddar cheese
- 6 large eggs
- 1 cup milk
- 2 tbsp butter, melted
- 2 green onions, sliced
- 1 tsp garlic powder
- ½ tsp paprika
- Salt and black pepper, to taste

- Extra cheddar cheese
- Sour cream
- Chopped parsley or chives
Instructions
- Preheat oven to 375°F (190°C).
- Boil potatoes for 8–10 minutes until slightly tender. Drain.
- In a large bowl, whisk together eggs, milk, butter, garlic powder, paprika, salt, and pepper.
- Stir in potatoes, bacon, and 1½ cups of cheddar cheese.
- Transfer to a greased baking dish and top with the remaining cheese.
- Bake for 35–40 minutes until golden and set.
- Garnish with green onions and serve warm.
