Creamy brocoli soup

Warm, comforting, and packed with flavor, this Creamy Broccoli Soup is the perfect cozy meal. Made with fresh broccoli, onions, garlic, and a touch of cream, it’s smooth, rich, and incredibly satisfying. Serve it with crusty bread for a delicious lunch or light dinner.

Ingrédients

  • 2 heads broccoli, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 2 tbsp butter
  • Salt and black pepper to taste
  • Optional: shredded cheddar cheese for serving

Preparation

  1. Melt the butter in a large pot over medium heat.
  2. Add the diced onion and cook for 3–4 minutes until softened.
  3. Stir in the minced garlic and cook for 30 seconds until fragrant.
  4. Add the chopped broccoli and pour in the broth.
  5. Bring to a boil, then reduce the heat and simmer for 15–20 minutes, or until the broccoli is tender.
  6. Blend the soup until smooth using an immersion blender or a regular blender.
  7. Return the soup to the pot and stir in the heavy cream.
  8. Season with salt and black pepper to taste.
  9. Simmer for 2–3 more minutes, then serve hot.
  10. Garnish with shredded cheddar cheese, broccoli florets, and a swirl of cream if desired.
