Ingrédients
- 2 heads broccoli, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream
- 2 tbsp butter
- Salt and black pepper to taste
- Optional: shredded cheddar cheese for serving
Preparation
- Melt the butter in a large pot over medium heat.
- Add the diced onion and cook for 3–4 minutes until softened.
- Stir in the minced garlic and cook for 30 seconds until fragrant.
- Add the chopped broccoli and pour in the broth.
- Bring to a boil, then reduce the heat and simmer for 15–20 minutes, or until the broccoli is tender.
- Blend the soup until smooth using an immersion blender or a regular blender.
- Return the soup to the pot and stir in the heavy cream.
- Season with salt and black pepper to taste.
- Simmer for 2–3 more minutes, then serve hot.
- Garnish with shredded cheddar cheese, broccoli florets, and a swirl of cream if desired.
