Ingredients
700 g white fish fillets (cod, halibut, tilapia, or haddock)
1 tbsp lime juice
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil
1 onion, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 garlic cloves, minced
2 tomatoes, diced
1 can (400 ml) coconut milk
2 tbsp tomato paste
Fresh cilantro, chopped
Lime wedges for serving
Instructions
Season the fish with lime juice, salt, and pepper. Let marinate for 15 minutes.
Heat olive oil in a large skillet over medium heat.
Sauté onion, peppers, and garlic until softened.
Add tomatoes and tomato paste. Cook for 5 minutes.
Pour in the coconut milk and bring to a gentle simmer.
Add the fish pieces and cook for 10–12 minutes until tender.
Sprinkle with fresh cilantro and serve with rice.
